Am I the only one who associates Valentines Day with indulgent food and yummy cocktails? I’m a huge foodie and my idea of time well spent with the ones I love is over a delicious meal and fabulous drinks. While he always surprises me with a little something extra, Dustin knows that my favorite way to celebrate this lovely holiday is with a great meal and a few glasses of something fruity and bubbly—No expensive gifts, flowers, chocolates, etc. necessary.
I actually made these limoncello prosecco cocktails the other night to celebrate the launch of my blog, but they were so pretty and festive that I thought they’d also make a perfect Valentines Day treat! Before this, I had honestly never tried limoncello, but now that I have, I think its safe to say that it has officially found a forever home on our little bar cart. I’m a huge fan of lemon flavored anything and the bright, citrusy pop of the limoncello was the PERFECT compliment to the crisp, refreshing prosecco. I thought the fresh raspberries and mint leaves would just spruce the drink up a little visually, but they also subtly infused the drink and further added to the yumminess of this masterpiece of a cocktail (Yes, I said yumminess). What You’ll Need
- Chilled Prosecco
- 1 oz. limoncello, chilled (per drink)
- Fresh raspberries
- Fresh mint leaves
Let’s Get Mixing
- Chill your glasses and your raspberries in the freezer about 15-20 minutes before you’re ready to make your drinks.
- In your frosty glass, first add your limoncello, then fill the rest of the way up with prosecco.
- Garnish with as many raspberries as desired and a few fresh mint leaves.
- Give it a quick stir and enjoy!
